Sesame Almond Fingers Cookies

THESE ARE SO FREAKING GOOD I SWEAR - so light and fluffy that I just want to eat them ALL. Another genius recipe invented by my amazing Mum! Oh and of course, these are super healthy too so you do not need to feel guilty after eating them! Perfect for those who love snacking like me!


Ingredients
Homemade Almond Meal (Recipe from earlier post http://stayfitandtravel.blogspot.hk/2014/11/homemade-almond-milk.html) x 1.5 cup
All-purpose Flour x 1 cup
Rolled Oats x 1 cup
Whole Eggs x 2
Coconut Oil x 1/3 cup
Vanilla Extract x 1 tsp
Brown Sugar x 1/2 cup
Pink Salt x 1/2 tsp
Black Pepper x 1/4 tsp
Garlic x 2 tsp
Fresh Lemon Juice x 2 tbsp
Roasted Black and White Sesames x a handful

Directions
Preheat oven at 375F. In a large mixing bowl, mix all dry ingredients (except the Sesames) together and then in another mixing bowl, stir all wet ingredients together until well combined. Mix the two together in one bowl. Scoop out the batter and form fingers shape for each Finger Cookie. Spread Sesames onto a big plate, roll Fingers Cookies onto the bed of Sesames. Bake in the oven for 10-12 minutes and TA-DAH, these super yummy Sesame Almond Fingers Cookies are ready!
