Refreshing Lemon Cookies

Healthy Lemon Cookies Recipe
One of the best snacks to satisfy your sweet cravings during the day...Lemon Cookies! Yummy and very very refreshing. Love them!
Healthy Lemon Cookies Recipe

Ingredients
Whole Eggs x 2
Lemon zest x 2-3 tbsp
Fresh Lemon Juice x 4 tbsp
Pink Salt x 1/2 tsp
Baking Powder x 1/2 tsp
Baking Soda x 1/4 tsp
All-purpose Flour x 2 cups
Oat Flour x 1 cup
Instant Oats x 1 cup
Organic Raw Coconut Flakes x 2tbsp
Coconut Oil x 1 cup
Brown Sugar x 1/2 cup
Pure Honey x 1/2 cup
Vanilla Extract x 1 tsp
Healthy Lemon Cookies Recipe

Directions
Preheat oven at 340F. In a large mixing bowl, mix Coconut Oil with Brown Sugar until combined. Pour in the rest of the ingredients and stir well. Grease baking pan and line it with parchment paper. Scoop out the mix (1-2 tbsp for each cookie) with a spoon and place it onto the parchment paper. LEAVE SPACE BETWEEN EACH COOKIE because they expand quite a bit. Bake for 9-11 minutes and TA-DAH, these yummy and refreshing lemon cookies are done!

    1. Hello! Thanks(: hmm i havent tried yet - you can try but i am pretty sure the texture will be quite different(: would recommend you to add some all purpose if you use whole wheat
