Oven-baked Purple Sweet Potato Balls with Roasted Sesame

Sweet Potato - being considered as one of the world's healthiest foods, to me, is also one of the world's yummiest foods! There are just too many ways to cook/ eat it. Just like everyone else, I am a huge fan of Healthy Baked Sweet Potato Fries (Leave a comment below if you would like the recipes for the Healthy Baked Fries!)

But my mum - the amazing chef behind a lot of the yummy dinner food you see here/ on my Instagram - came up with an even healthier recipe to cook sweet potato: OVEN-BAKED PURPLE SWEET POTATO BALLS with Roasted White Sesame!  these goodies right out from the oven are lightly crisp on the outside and very chewy on the inside (I know I say that a lot about many of my food haha but I SWEAR that's exactly how they taste like <3)
Oven Baked Purple Sweet Potato Balls Recipe
Ingredients
Whole Egg x 1
Small Purple Sweet Potatoes x 3 
Fresh Garlic (Minced) x 1 tbsp
Pink Salt x 1 tsp
Pepper x 2 tsp
Baking Powder x 1/2 tsp
Roasted Black Sesame/Roasted White Sesame x 2 tbsp
Rolled Oats x 1/2 cup
Optional: Red Chili Flakes x 1 tsp (Add it if you like it a teensy bit spicy)

Directions
Steam the sweet potatoes for 15 minutes/ Bake them for 30 minutes at 375F. Blend the Rolled Oats with a blender/ food processor on high into powder/flour- form. Mash the cooked sweet potatoes in a large mixing bowl, add the flour-form Oats and all the rest of the ingredients into the bowl. Stir until combined. For each Sweet Potato Fritter, scoop out 1.5 -2 tbsp of the mix and roll it into a ball shape. Press it down to a cookie-shape/ keep them in a ball-shape. Place all of the balls onto a parchment paper on the baking dish. Bake them in the oven at 120C for 10 minutes and then flip them to the other side and bake for 5-10 minutes more.
