Healthy Vegetarian Portobello Mushroom Burger

Since I have started doing vegetarian-only meals for at least 5 days a week, I have been trying to think of creative ways of vegetarian recipes that are both yummy, healthy and also able to provide me with enough nutrition (especially protein that I was so used to getting from eating a lot of meat). 


and hence, this Healthy Vegetarian Portobello Mushroom Burger with Grilled Tofu and Pumpkin as fillings became one of my favorite vegetarian dishes! Not only is it healthy, it tastes HEAVENLY as the flavors go very well together - I would totally pick this over McDonald's any time! 

and the best thing is - it is very simple and easy to make! Perfect for a quick dinner <3


Ingredients
Portobello mushrooms x 4
Baby Spinach x 1 cup
Tomato x 1 
Firm Tofu x 1 (14 ounce) 
Red Onions x 1/2
Homemade Pumpkin Puree x 1 cup (Recipe can be found at earlier post: http://stayfitandtravel.blogspot.hk/2014/11/homemade-pumpkin-puree_7.html)
Serving: 2 Burgers


Directions
Have Pumpkin Puree prepared - (from recipe above). Then preheat the oven to 150C. Hand-massage the mushrooms with olive oil. Have them oven baked  for 10 minutes. Cut the Tomatoes, Tofu and Red Onions into slices and pan-fry them until golden brown. Using the Mushrooms as the Top and bottom "burger buns', you can stack the fillings up in between the mushroom - adding in Raw (thorouhgly washed) Baby Spinach. Ta-dah, your healthy vegetarian burger is ready! You can add in cheese or any other ingredients if you like!
