Double Dark Chocolate Avocado Cookies (Healthy and Gluten-Free)

We all know that one of the biggest headaches to be on a fitness journey is WHAT TO SNACK ON. No more potato chips..no more nachos..no more candies..no more cookies.. doesn't life sound pretty sad ): NO WE CANNOT LET THAT HAPPEN! 
We will make our own healthy snacks and sweet treats - so we can keep calm and SNACK ON (: in a healthy, guilt-free way of course! How awesome life is when you can snack on your yummy munchies but at the same time know that you are nourishing your body with plenty of nutrition!

So here it is - one of the healthiest sweet treats we made so far! Gluten-Free Double Dark Chocolate Avocado Cookies! You know something is healthy when you see the word "Avocado" ;p
Healthy and Gluten Free Double Dark Chocolate Avocado Cookies Recipe
Ingredients
Medium Ripe Avocados x 2
Whole Eggs x 2
Buckwheat Flour x 1.5 cup (You can also use other flour if you want)
Pure Honey x 2 tbsp
Baking Powder x 2 tsp
Baking Soda x 1 tsp
Vanilla Extract x 2 tsp
Pink Salt (Sprinkle a bit)
Coconut Oil x 1/2 cup
Raw Cacao Powder x 1/2 cup
Raw Cacao Nibs x 3/4 cup (You can add in more if you just can't get enough of that bittersweet taste)

Directions
Preheat Oven to 350F. Mix the dry ingredients (Buckwheat Flour, Baking Powder, Baking Soda, Pink Salt, Raw Cacao Powder) in a mixing bowl. Then in another large mixing bowl, stir Avocado (Mashed), Eggs, Coconut Oil, Vanilla Extract and Pure Honey together until well combined. Pour the dry mix into the wet mix - slowly stir them together until combined. Fold in the Raw Cacao Nibs. Then scoop out the batter (1-2 tbsp for each cookie) with a spoon onto a parchment paper onto a baking dish. Please note that the batter is quite wet - will be quite difficult if you try to use your hand to roll it into a cookie shape - spoon will be a better option.
Bake the cookies for 10-15 minutes and ta-dah your super healthy Double Dark Chocolate Avocado Cookies are ready!
**Just to set your exceptions right: These cookies are not crunchy - they are soft (as you can imagine - with avocado added) but I love them nonetheless, especially given how healthy they are (:**
