Chocolate & Coconut Berry Oats Cookies

Chocolate & Coconut Berry Oats Cookies Recipe
There have been quite a lot of cookies-baking at home these days because we just cannot get enough of these yummy and guilt-free sweet treats!The recipe of these Chocolate & Coconut Berry Oats Cookies are actually pretty much the same as Cranberry Oatmeal Cookies that we made a while ago (Recipe can be found at earlier post: http://stayfitandtravel.blogspot.hk/2014/11/chewy-spelt-oatmeal-cranberries-cookies.html). Since those cookies were so frigging amazing, my mum decided to make them again but this time she changed the recipe a bit i.e. replacing Spelt Flour with Gluten-free Coconut Flour, replacing Brown Sugar with Pure Honey, adding in some Dried Blueberries, and also some Raw Cacao Powder and Coconut Powder. So yes, these cookies this time are an even healthier version!
Chocolate & Coconut Berry Oats Cookies Recipe
Ingredients
Coconut Flour x 1.5 cups
Rolled Oats x 2.75 cups
Unsweetened Dried Blueberries + Dried Cranberries x 3/4 cup
Vanilla Extract x 1 tbsp
Whole Eggs x 3
Coconut Oil x 1/2 cup
Pink Salt x 1/2 tsp
Baking Powder x 1 tsp
Baking Soda x 1 tsp
Cornstarch x 2 tsp

Homemade Almond Milk x 1 cup
Raw Cacao Powder x 2 tbsp
Pure Honey x 4 tbsp
Organic Raw Coconut Powder x 3 tbsp

Directions
Mix Coconut Flour, Raw Cacao Powder, Raw Coconut Powder, Pink Salt, Baking Powder, Baking Soda and Cornstarch in a large mixing bowl. Then stir coconut oil, sugar, eggs, pure honey and vanilla extract in another mixing bowl until combined.
Pour the dry mix to the wet mix and stir well. Add the oats and dried berries into the mix and stir until well combined.
Preheat oven to 190C. Refrigerate the mix for 15-20 minutes so they can be easier to be rolled into cookie balls. For each cookie, scoop out two tbsp of the mix and roll it into a ball-shape. Then press it down to a flat cookie shape.
Put the cookies onto a parchment paper on the baking dish. Bake them in the oven for 10-12 minutes until they turn golden brown.

    can you explain me what are the different between coconut flour and coconut powder?

    1. Hello! They are very different - coconut flour is a flour and you need it for recipes that require flour. coconut powder is more for the taste - you can just eat it raw/ sprinkle it on top of dessert and etc

    2. So coconut powder is similar to coconut flakes, right?

    3. Yes you are right! But coconut flakes - if put into the oven- are very easy to get burnt so sometimes its better to mix in coconut powder into the baking mix instead (:

  2. Hi, did you actually use the almond milk for your cookies as written on your ingredients column? It says 1 x cup of almond milk on your ingredients list, but on your steps, there isn't any milk. I'm confused. Thanks.

    1. Hello! Ah so sorry I missed the milk in the step haha didnt realize it, yep you have to mix the milk into the wet ingredient (: I will update the post now thanks for letting me know! (: xx

  3. ah okay, no worries! so, i added the milk in anyhow, but the texture turned out to be really weird and wet. I tried baking for 20 mins and still wet inside. I am just not sure if that is the right texture of your cookies. Anyway, thanks for the reply! you look great :)

    1. hmm that's really weird, our cookies were just fine and we actually even made three batches! Not sure if it is because the homemade almond milk that I used was more creamy/ my oven is stronger lol I am sorry to hear that tho! (: and thanks for the kind words xx
