Chocolate Blueberry Almond Breakfast Muffins

It's baking time again!! WHOOPWHOOPS! I don't think I can ever live without an oven. If I can only choose one between oven and a washing machine to have at home, I will totally pick the oven haha I would rather hand-wash all of my clothes...that's how much I love baked food! <3

Chocolate Blueberry Almond Spelt Muffins Recipe

As we make our own Almond Milk on a weekly basis (Recipe can be found at earlier post: http://stayfitandtravel.blogspot.hk/2014/11/homemade-almond-milk.html), we often have a lot of Almond Meal left (the remains on the cheese cloth/ strainer). Instead of just throwing it away which is such a waste due to the healthy nutrition that it contains, we used it to make these healthy and yummy muffins!


Chocolate Blueberry Almond Spelt Muffins RecipeIngredients
Almond Meal x 1 cup
Fresh Blueberries x 1/2 cup
Dried Blueberries x 1/2 cup
Eggs x 3
Coconut Oil x 3-5 tbsp
Vanilla Extract x 1tsp
Pink Salt x 1/2 - 1 tsp
Baking Soda x 1/2 tsp
Spelt Flour x 2 tbsp
Pure Honey x 1/2 cup (you can sub it with other sweetener of your choice)
Raw Cacao Powder x 2 tbsp
Raw Almonds x 2 tbsp


Directions
Preheat oven to 350F. Chop up Raw Almonds. Mix Almonds, Almond Meal, Spelt Flour, Pink Salt, Baking Soda and Raw Cacao Powder together in a mixing bowl. In another bowl, stir eggs, oil, vanilla extract and honey together until well combined. Then pour the wet mix into the dry mix, and stir well. Fold in the fresh and dried blueberries into the mix.
Grease the muffin pan with oil/ fill with paper liners. Then scoop out the batter to fill up the muffin pan. Bake them in the oven for 20-30 minutes and ta-dah these Chocolate Blueberry Almond Muffins are done!
