Microwave Chocolate Banana Almond Mini-Cake (Vegan and Gluten-free)

I am so happy that most of you like my recipes so far - especially a lot of the yummy baked sweet treats <3 However, I know that some of you do not have an oven at home and were not able to try the recipes ): so today, I am going to experiment with the Microwave to make a Chocolate Banana Almond Mini-Cake that is healthy, gluten-free, and perfect for vegan!
Vegan and Gluten-free Microwave Chocolate Banana Almond Cake Recipe


Not only does it not require the oven, it is also super simple and quick to make - perfect for a rush morning or if you are just feeling lazy! ;p


Ingredients
Buckwheat Flour x 5 tbsp
Homemade Almond Milk (Or any other milk of your choice) x 6 tbsp
Raw Cacao Powder x 1 tbsp
Banana x 1/2
Pink Salt x 1/2 tsp
Coconut Oil x 1 tbsp
Baking Soda x 1/2 -1 tsp
Raw Almonds (Chopped) x 1/2 - 1 tbsp
Pure Honey x 1 tbsp
OPTIONAL: Brown Sugar x 1 tsp (I want my chocolate cake to be sugar-free so I did not add any)
Vegan and Gluten-free Microwave Chocolate Banana Almond Cake Recipe

Directions
Mix Buckwheat Flour, Cacao Powder, Baking Soda and Salt in a mixing bowl, then add in coconut oil, pure honey and milk. Stir until well combined. Then cut the half banana into slices, layer the slices into a small bowl while pouring the mix into the bowl. Sprinkle chopped almonds on top. Microwave on high for 3 minutes and TA-DAH its done! Super easy and quick right?
